History of Carol’s Cakes

In 1990, after working many years at Safeway, Carol Soltys began operating her own home-based cake business—Carol’s Cakes—which soon developed a solid reputation for beautiful, quality, affordable and delicious cakes.

Needing more space, she along with her husband, Rob Olafson decided to move into Northwood Family Foods where they became a full-service bakery. Carol’s sister, Chris Biloski and Rob baked and her daughter, Terri-Lynn Soltys became the head decorator and eventually the bakery’s manager.

The business continued to grow in popularity and in early January 2012, they expanded again with Carol’s Cakes Café on the corner of Arthur Street and Twin City Crossroad which ultimately closed only a few short years later.

Changes at Carol’s Cakes

Jenny Duggan baked her first cake—when she was only 12 years old—for her little brother’s hostipal home coming. While attending university in the early 2000s, she worked part- time as a cake decorator at Carol’s Cakes, where she became really good friends with Carol’s daughter, Terri-Lynn.

Jenny’s love of baking and decorating cakes— especially for her kids and family birthdays—was never considered to be a career option. However after university with three children and working full-time, Jenny continued to work weekends and casually, whenever Carol needed help.

Jenny did worked full-time at Carol’s Cakes in 2009/2010, until she started her career at Itec 2000. Even then, she still helped Carol when she could—that’s what family friends do.

Sadly, Terri-Lynn (2020) and Rob (2021) passed away. Carol’s Cakes Café closed and shortly after Carol’s Cakes was for sale. Jenny decided it was the career for her—even if she hadn’t actually baked for Carol’s Cakes before, so…

In August 2022, she and her partners (Erin Sisko and Deena Kruger) purchased the bakery and Jenny began training with Carol every afternoon.

Carol’s Cakes is in good hands and still…
